Vegan Mango Lassi
Mango lassi is a refreshing, cooling drink served with meals in India. It’s a childhood favorite, made vegan in this recipe, that celebrates the king fruit.
Ingreadient
- One 30-ounce can Indian mango puree
- 1 1/2 cups plain vegan yogurt
- 1/2 cup frozen mango chunks
- 2 tablespoons fresh lemon juice
- Mint sprigs, for garnish
- Crushed cardamom seeds, for garnish
Direction
- Combine the mango puree, yogurt, frozen mango and lemon juice in a blender and pulse until almost smooth. Blend in 1 1/2 to 2 cups water as needed until smooth. Pour into glasses. Garnish with mint sprigs and crushed cardamom seeds.
